Fresh Pecorino / Tuma
This
is literally fresh cheese curd, normally slightly salted and vacuum-sealed
however it is also available without salt Monday, Wednesday and Friday
mornings. It is very versatile and used
differently in different cultures for both sweet and savory dishes. Fresh
Pecorino can simply be enjoyed sliced and marinated in oil, herbs and spices or
sliced and either grilled or turned into a schnitzel.

| Ricotta
Meaning
“re-cooked”, ricotta is made from whey and is a soft creamy cheese, perfect in both
sweet and savory dishes or to be enjoyed by itself. When freshly made and still
warm, ricotta has a softer texture and is naturally sweet.
