Pecorino  

This cheese is very versatile, perfect to serve as a table cheese or to be grated for your pastas, risottos and all your favourite recipes. Its flavour intensity and texture depends on the maturity, the older the cheese the stronger and dryer it is.

Available in 10kg and 5kg wheels or Wedges

Maturity ranges between 3 and 12 months, depending on availability


Pecorino Pepato

Typically very mild cheese with whole peppercorns, perfect to serve as a table cheese or and can be dried and grated for your pastas, risottos and all your favourite recipes.

Available in 10kg and 5kg wheels or Wedges 
Maturity is typically around 2 to 3 months, with an occasional older wheel 

Parmesan
Probably the most well known Italian cheese, it is mainly used for shaving or grating. Our local Parmesan is a lot creamier than most imported varieties, making it great as a table cheese as well as a grating cheese for pastas, risottos and all your favourite recipes depending on its maturity.

Maturity ranges between 3 or 10 to 12 months, depending on availability

Pecorino Chilli

This is a mild to tasty cheese with hot chilli flakes. It’s perfect as a table cheese or to be grated for your pastas, risottos and all your favourite recipes.Available in 6kg wheels or Wedges 

Maturity ranges between 3 and 6 months, depending on availability.


Grated Cheese

Our locally made product is slightly dried then grated and sifted until it becomes quite fine. Great for pastas, risottos and for adding extra flavour to crumb mixtures, stuffing’s etc
Available in Pecorino 375g or 1kg Bags and in Parmesan in 375g, 1kg and 3kg bags


Provole

Italy’s answer to ‘tasty cheese’, provole has a smooth creamy texture with a mild to strong taste depending on its maturity. This is a tastier, slightly harder version of a mozzarella, great to serve as a table cheese or as a melting cheese.

Available in 800g logs, Maturity ranges between 1 and 3 months, depending on availability


Mozzarella

Another well-known Italian cheese, mozzarella is a very mild cheese with a soft and creamy texture ideal as a melting cheese for pizzas, lasagnas, toasted sandwiches etc.

Fresh Pecorino / Tuma


This is literally fresh cheese curd, normally slightly salted and vacuum-sealed however it is also available without salt Monday, Wednesday and Friday mornings.  It is very versatile and used differently in different cultures for both sweet and savory dishes. Fresh Pecorino can simply be enjoyed sliced and marinated in oil, herbs and spices or sliced and either grilled or turned into a schnitzel.

Ricotta


Meaning “re-cooked”, ricotta is made from whey and is a soft creamy cheese, perfect in both sweet and savory dishes or to be enjoyed by itself. When freshly made and still warm, ricotta has a softer texture and is naturally sweet.
Available in 375g tubs, 1kg bags or 20kg boxes

Ricotta Salata or Salted Ricotta


This small cheese started as 1kg of fresh ricotta, it was then hand salted and dried to become what you see here. This salty and creamy cheese can be grated onto pastas and salads, or sliced with fresh bread, fruits and vegetables.
